100 guest intercepts that changed a London restaurant group's UK expansion plan

Challenge

A celebrated London restaurant group ran two concepts under one brand: a flagship dining room with real cultural cachet and a smaller, more intimate bar. Both were thriving in London and the group was planning to open in several new UK cities. The data could not answer the questions that mattered: do guests see the two concepts as one brand or as two destinations, what drives the choice of the bar over the restaurant on a Friday night, and would the equity built in London travel to cities where neither concept existed? The group needed to hear it from guests in the moment, while the experience was still fresh.

Proprietary solution

MindMarket designed a customer intercept programme across the two London locations, one for each concept, and conducted 100 structured conversations with guests immediately after their visit: eight to ten minutes each, long enough to get past first impressions, short enough to catch the feeling before it faded. The moderators were experienced hospitality researchers who know how to open a conversation with someone who has just had a good evening without it feeling like an interruption, and how to probe brand perception without leading. The programme ran with daily reporting and real-time quality control, so a pattern visible after thirty conversations was flagged to the client while fieldwork was still live.

Result

The two concepts were not competing; they were having different conversations with their guests. The flagship was described in social and cultural terms, a place to bring people and share a story. The bar was described as personal and independent, chosen precisely because it felt distinct from the larger brand. Awareness outside London was thick with warmth for the flagship and thin for the bar. The group had planned to lead new cities with the flagship and let the bar ride on its name; the research reversed that logic. Market entry sequencing, concept positioning and the marketing plans were revised to give the bar its own identity. In the client's words: they thought they were expanding one brand into new cities and learned they were expanding two.
